Swordfish or marlin steaks

...with a pineapple sambal

8 slices fresh pineapple,cored & diced 2 chillies,seeded & sliced 1 garlic clove,finely chopped 1 heaped tspn grated fresh ginger juice of 1–2 limes freshly ground salt& pepper
4 x 180 gm swordfish or marlin steaks vegetable oil spray
lime wedges
Toss together in a bowl and setaside for 15 minutes.
Spray fish with oil,season and barbecue over a high heat.
Serve with a spoon of sambal and lime wedges.

...with a Cuban pawpaw salsita
1/4cup olive oil
1/2small red onion,chopped 2 chillies,seeded & sliced
1/2medium pawpaw,peeled,seeded & diced zest& juice of 1–2 limes zest& juice of 1 orange 6–8 mintleaves,sliced

4 x 180 gm swordfish or marlin steaks olive oil spray freshly ground salt& pepper
Cook in a small pan over a low heatfor a few minutes.
Putin a bowl,pour hotoil mix over and leave for 30 minutes to develop flavours.
Spray with oil,season and barbecue over high heat. Scatter salsita over plates and top with fish steaks.
