Salmon steaks or fillets

...in a BLT sandwich
1/2cup mayonnaise 3 tbsp sour cream 3 tbsp chopped fresh basil zest& juice of
1/2lemon
4 x 100 gm salmon steaks,boned & skinned 1 lemon olive oil spray sea salt
4 rindless bacon rashers 8 thick slices of sourdough bread
3 ripe,red tomatoes,thickly sliced 1 red onion,finely sliced inner leaves of a cos lettuce
Mix.
Season and spray with oil.Then barbecue,squeezing over lemon juice as you do so.
Atthe same time,cook bacon and,when fish is almostready,the bread.Lay 4 slices of bread on the bench and smear generously with mayo.
Top with tomato,onion,lettuce,salmon,bacon and more mayo and then the other slices of bread.
