Swordfish or marlin steaks

...on BBQ spring onions with a putanesca salsa

6 tbsp olive oil
1/2red onion,chopped 2 garlic cloves,crushed 2 chillies,seeded & finely sliced
4 anchovies,chopped 6 tomatoes,peeled,seeded & diced
(see page 110) 6 pitted black olives,sliced 12 capers,rinsed 8 basil leaves,sliced 4 tbsp freshly grated parmesan
4 x 180 gm swordfish or marlin steaks olive oil spray freshly ground salt& pepper
olive oil spray 1–2 bunches large spring (green) onions,
cleaned
In a small pan on the BBQ,heatoil and gently sauté vegetables.Putin a bowl.
Add to bowl,toss well and setaside.
Oil and season fish.Then barbecue over a high heat.
Atthe same time,spray onions and toss on BBQ, cooking until slightly charred all over. Puton plates or a platter and top with fish and salsa.
