Ingredients :
600g chicken breast (cut into bite-sized pieces)
500ml coconut milk (squeezed from 1 coconut)
4 tablespoons kerisik (pounded dry-fried grated coconut)
1 cinnamon stick
1 star anise
1 piece palm sugar (finely chopped)
5 lime leaves (shredded)
oil for stir-frying
sugar, salt to taste
1 lime (halved)
Ground ingredients :
2cm piece ginger
2cm piece galangal
2 teaspoons coriander seeds
10 dried chillies
2 stalks lemon grass
5 cloves garlic
4 shallots
2cm piece turmeric
Method :
1. Heat oil. Fry the ground ingredients till the oil separates. Add the chicken pieces and lime leaves. Stir well.
2. Mix in the seasoning, kerisik, star anise, cinnamon, palm sugar and coconut milk.
3. Stir occasionally till the gravy boils. Then simmer till the gravy is almost fry.
4. Squeeze some lime juice over the top.
