Ingredients :
600g chicken meat (boiled and torn into thin strips)
100g grated coconut (dry-fried)
1 teaspoon tamarind juice oil for stir-frying
salt, sugar to taste
Ground ingredients :
4 shallots
5 cloves garlic
8 dried chillies
2cm dried shrimp paste
4cm piece galangal
2cm piece ginger
2cm piece turmeric
2 stalks lemon grass
Method :
1. Dry-fry the chicken pieces till golden brown. Set aside.
2. Heat the oil. Stir-fry the ground ingredients and tamarind juice for 2 minutes. Then add the seasonings.
3. Add in the cooked chicken and coconut. Mix well. Stir over low heat till really crispy and brownish in colour.
4. Serve with rice or lontong (compressed rice)
