Avocado and Tomato salad

4 cups Florida avocado, diced medium
2 cups Florida grape or cherry tomatoes
2 cups cucumber, peeled and diced medium
1 cup Florida red onion, diced small
4 tablespoons fresh Florida cilantro, chopped
2 teaspoons fresh Florida garlic, minced
2 tablespoons Florida lime juice
1/4 cup olive oil
Salt and fresh black pepper to taste

Gently toss ingredients together and serve on a bed of fresh Florida Bibb lettuce.

Yield: Serves 8-10
