TOFU-AND-SNOW PEA SOUP

4 c. Defatted chicken stock 1 4 oz. cake tofu, cubed 1/4 c.Thinly sliced mushrooms 1/4 c.Minced green onions 1/4 c.finely chopped carrots 1 lg. Clove garlic, minced 1 tsp. Grated fresh ginger pinch: Of anise 1 tsp.
Low sodium tamari sauce (soy sauce) 1 c. Fresh snow peas (Chinese pea pods)
1. Place all ingredients, except snow peas, in a sauce pan.  Bring to a boil, lower heat and simmer covered for 20 minutes.
2. Add snow peas and cook briefly until just tender.
Makes 4 cups.
