GARDEN MARINARA

Ingredients:
2 tblsp olive oil, garlic, basil, salt, pepper, saute--then add: Sweet peppers (green, red, yellow--whatever available) cut in strips Chopped spinach (about 1/2 cup)
1 small eggplant, chopped 1 small purple onion, chopped 2 cans crushed tomatoes

Instructions:
Cook for about 1 hour.  Serve over linguine sprinkled with parm/romano cheese
