...crayfish (lobster) with a roasted capsicum butter
2 red capsicums,roasted & peeled (see page 110)
2 anchovies 150 gm softunsalted butter
1/2tbsp chopped parsley freshly ground salt& pepper
2–4 green crayfish tails
1–2 bunches watercress,washed
Whiz up capsicums and anchovies in a processor. Add to butter in a bowl with parsley and seasonings and,with your hands,mix gently.
Cutin half lengthways and remove track.Then cook flesh side down on hotBBQ for 3 minutes.Turn over and smear generously with the butter,move to moderate partof the BBQ and cook,covered,adding more butter as you do so.When ready (to check,make a small cutin flesh) remove.
Scatter over plates or a platter.Putcrays on top and add a few more dollops of the butter on top.
