Singapore Noodles

Ingredients:

  • 60ml oil
  • 4-6 cloves garlic, minced
  • 2 tbsp ginger, chopped
  • 300g cooked chicken, shrimp or beef, diced in 1cm
  • 5 stalks spring onions, slivered
  • 2 tsp chili powder or to taste
  • 60ml oyster sauce
  • 3 tbsp curry powder
  • 2 tsp sweet soy sauce
  • A little water
  • 250g rice vermicelli, soaked to soften, scalded and drained
  • Salt to taste
Directions:
  1. Heat oil in a pan and lightly brown garlic and ginger.
  2. Add chicken (shrimp or beef), spring onions and chili powder. Stir fry till fragrant.
  3. Add oyster sauce, curry powder and soy sauce. Stir, sprinkle some water and toss well to mix thoroughly. Add salt to taste.
  4. Add vermicelli and toss well. Serve hot.
