Ingredients:
- 60ml oil
- 4-6 cloves garlic, minced
- 2 tbsp ginger, chopped
- 300g cooked chicken, shrimp or beef, diced in 1cm
- 5 stalks spring onions, slivered
- 2 tsp chili powder or to taste
- 60ml oyster sauce
- 3 tbsp curry powder
- 2 tsp sweet soy sauce
- A little water
- 250g rice vermicelli, soaked to soften, scalded and drained
- Salt to taste
- Heat oil in a pan and lightly brown garlic and ginger.
- Add chicken (shrimp or beef), spring onions and chili powder. Stir fry till fragrant.
- Add oyster sauce, curry powder and soy sauce. Stir, sprinkle some water and toss well to mix thoroughly. Add salt to taste.
- Add vermicelli and toss well. Serve hot.
