Notes:
The ubiquitous club sandwich is on every "coffee shop" menu in America. So it's easy to use the same ingredients in an omelet version. Try a Reuben omelet, Monte Cristo omelet! Make those old standard ingredients work in something new.
*If using liquid or frozen whole egg: 2 pounds 10 ounces.

OMELET MIX
24 large California Fresh Eggs*
1 1/2 cups water
OMELET FILLING
18 ounces sliced, cooked turkey breast
24 slices bacon, cooked
4 tomatoes, sliced
1. Beat together eggs and water to prepare omelet mix. Refrigerate.
2. For 1 omelet, warm 1 1/2 ounces turkey and 2 slices of bacon.
3. Use 1 - 4 ounces ladle of omelet mix to prepare omelet. Fill with turkey, bacon and 3 slices tomato.
4. Close omelet.
