Apricot Butter

Yield: 1 1/2 Cups

1/2 cup cream cheese, softened
1/4 cup unsalted butter, softened
1/2 cup apricot preserves or jam

Beat cream cheese and butter together with a wooden spoon, an electric mixer or in a food processor until creamy. Add the preserves, beating until blended. Spoon into serving bowl, cover and refrigerate until ready to use.

Makes about 1 1/2 cups
